As you know I do not have BEST friends as I do not like to catagorise people and I believe that everyone has their place in your heart. Yes there are people that rise to the top in different chapters of out life stories but they all help to make the reading of our life more interesting, fun and enjoyable so that we want to read on right to that last page.
Saying that there are three ladies that would be on my VIP list. My beautiful mother,adorable sister Lollie Bebs and my lucky star, My Nan.
My Nan is so so so awesome and helped to bring me up and I think that she did a rather good job. All the bizarre and wonky bits I guess are just cos I am wonky and bizarre but apart from that she has taught me how a calm manner and understated demeanor, makes you a complete individual and beautiful. I am still working my day to day calmness and for now just enjoy and love to visit my Nan and feel so calm, happy and safe.
I will write so much more about my Nan in the months to come as she plays such a vital part in my life. At nearly 80 I think she is A mazing even though she says that she is goofy looking she is simply beautiful, inside out, upside down an if you twirled her around and around ..... Hey Presto you would still see my beautiful, special Nan !!!!!
I try to get over to my Nan as much as I can and as she lives by the sea the visits always feel more special, complete and peaceful.
I laugh now as every time I visit she insists on cooking and even if i am not hungry, I eat.
Sometimes I say that I will be fine and will not need a meal ..... so the pesky minx pulls her card out of the bag
..... to which I reply ..... 'oh go on then Nan, see you a 6pm xxx'
I LOVE this meal which looks abit of a mix up but tastes fantastic and I swear that if you place a bowl of it in front of me the size of a football pitch, I would eat it all.
eeeeek I hope my Nan is not reading this as she will have that football pitch of Carolina Chicken bubbling away on her hob.
To complete my meal I had some lusheous cherries, a little white wine and few hours of chat with my special Nan.
1 Cup = 1/2 pint
3 Cups Cooked Chicken Diced
2 Cups Chopped Celery
1 Cup Medium Grated Cheese
1 Cup Mayonnaise
A Couple of Shakes of Cayenne Pepper
2 Tablespoons Lemon Juice
1/2 Teaspoon Salt
1/2 Cup Water Chestnuts
Teaspoon Grated Onion
1/2 Cup of Broth
Mix Together in a Pyrex Bowl
Place Ready Salted Crisps on top (Nan used Hula Hoops as she forgot to get Crisps)
Cook at 160 0C for 30 Minutes
Serve with Basmati Rice
